Creamy Garlic Parmesan Chicken Pasta

Ingredients
  

For the pasta

  • 1 lb Twisted pasta (fusilli or penne, rotini) 450g

For the chicken

  • 2 large Chicken breasts (Boneless skinless, cut into 1-inch cubes)

For the sauce

  • 3 tbsp Unsalted butter Divided
  • 4–5 cloves Garlic (Minced)
  • cups Heavy cream For creamy sauce
  • ½ cup Chicken broth For depth of flavor
  • 1 cup Parmesan cheese (Freshly grated)
  • 1 tsp Italian seasoning Divided
  • ¼ tsp Red pepper flakes Optional
  • Salt and pepper To taste
  • 2 tbsp Fresh parsley (Chopped for garnish)

Instructions
 

Cooking Pasta

  • Cook the pasta in a large pot of salted boiling water according to package instructions. Once cooked, drain and set aside.

Preparing & Cooking Chicken

  • In a large skillet, heat 2 tablespoons of butter over medium heat.
  • Add the chicken cubes and season with salt, pepper, and ½ teaspoon of Italian seasoning. Cook until the chicken is no longer pink, about 5-7 minutes.
  • Remove the chicken and set aside.

Making Garlic Parmesan Sauce

  • In the same skillet, add the remaining butter and minced garlic. Sauté for about 1 minute until fragrant.
  • Pour in the heavy cream and chicken broth, then bring to a simmer.
  • Stir in the Parmesan cheese and remaining Italian seasoning, and let the sauce thicken for about 3-4 minutes.

Combining & Serving

  • Add the cooked pasta and chicken back into the skillet and toss to combine everything evenly.
  • If you like a bit of spice, sprinkle in the red pepper flakes. Adjust seasoning with salt and pepper, if needed.

Notes

This dish is best served hot. Garnish with extra Parmesan cheese and chopped parsley. Pairs well with a side salad or crusty bread. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet with a splash of chicken broth or cream to loosen up the sauce.
