  • 1 cup chopped ham
  • 2 cups potatoes, diced
  • 1 cup onions, chopped
  • 1 cup carrots, diced
  • 1 cup celery, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Cooking

  • In a large pot, heat olive oil over medium heat.
  • Add the chopped onions, carrots, and celery, and sauté until they are tender.
  • Stir in the diced potatoes and chopped ham.
  • Pour in the chicken broth and bring to a boil.
  • Reduce heat and simmer until the potatoes are soft, about 15-20 minutes.
  • Stir in the heavy cream and season with salt, pepper, and garlic powder.
  • Cook for an additional 5 minutes.
  • Serve hot.

Notes

Serve hot in bowls. You can add some fresh herbs on top for decoration, or serve it with crusty bread on the side for dipping. A sprinkle of cheese can also add a nice touch if you like. To store leftover soup, let it cool completely, place it in an airtight container and keep it in the refrigerator for about 3-4 days or freeze it for up to 3 months.
