  • 1 cup Chopped ham Use meaty ham pieces for best flavor.
  • 2 cups Diced potatoes Yukon gold or russet potatoes work well.
  • 1 cup Chopped onions
  • 1 cup Diced carrots
  • 1 cup Chopped celery
  • 4 cups Chicken broth Choose good quality broth for best flavor.
  • 1 cup Heavy cream Can substitute with half-and-half or whole milk.
  • 2 tbsp Butter
  • Salt and pepper To taste.
  • 1 tsp Garlic powder Optional.
  • 1 tsp Thyme Optional, for flavor.

Preparation

  • Melt the butter in a large pot over medium heat.
  • Add the chopped onions, carrots, and celery. Sauté for about 5 to 7 minutes until they soften.

Cooking

  • Toss in the chopped ham and diced potatoes, stirring well to combine.
  • Pour in the chicken broth and bring to a gentle boil.
  • Reduce the heat and let the soup simmer for about 15 minutes, until the potatoes soften.
  • Stir in the heavy cream and season with salt and pepper, adding garlic powder if desired.
  • If the soup is too thin, let it simmer for a few more minutes to thicken.
  • Add thyme, if using, and adjust seasoning as needed.

Serving

  • Ladle the soup into bowls and serve hot, possibly with crusty bread on the side.

Notes

To enhance flavor, consider garnishing with fresh parsley. Leftovers can be stored in an airtight container in the refrigerator for 3-4 days.
