Ingredients
  

For the Pie Crust and Base

  • 1 piece Pre-made pie crust Feel free to use homemade if preferred.
  • 1 cup Sugar
  • 1/4 cup Cornstarch
  • 1/2 teaspoon Salt
  • 2 cups Water
  • 3 large Egg yolks
  • 1/2 cup Fresh lemon juice Fresh lemons are recommended for the best flavor.
  • 2 tablespoons Lemon zest
  • 2 tablespoons Butter
  • 1/4 teaspoon Yellow food coloring (optional) For a vibrant look.

For the Topping

  • 1 cup Heavy cream For topping.
  • 2 tablespoons Powdered sugar For topping.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a medium saucepan, combine sugar, cornstarch, and salt; whisk until mixed.
  • Gradually whisk in the water and bring the mixture to medium heat, cooking until it thickens.
  • In a separate bowl, whisk the egg yolks. Slowly temper them with some of the hot mixture while whisking constantly.
  • Return the tempered yolk mixture to the saucepan and cook for another two minutes until it comes to a gentle boil.
  • Stir in fresh lemon juice, lemon zest, and butter. Add food coloring if desired.
  • Pour the filling into the pre-made pie crust and let it cool to room temperature before refrigerating.
  • Chill the pie in the fridge for at least two hours.

Serving

  • Whip the heavy cream with powdered sugar until soft peaks form.
  • Spread or pipe the whipped cream over the chilled pie, slice, and serve.

Notes

For best results, use fresh lemons for both juice and zest. Make ahead for convenience, and only whip the cream just before serving.
