  • 1 large garlic clove, minced
  • 6 cups chicken broth Homemade or low-sodium broth works well.
  • 6 cups peeled & diced Russet potatoes Russet potatoes break down nicely in soup.

  • In a crockpot, combine the ground beef, diced onion, minced garlic, chicken broth, and diced potatoes. Stir to combine.
  • Cover and cook on low for 6-8 hours or on high for 4-5 hours, until the potatoes are tender.
  • Serve hot.

Notes

For extra creaminess, stir in a splash of heavy cream or milk before serving. Add spices like pepper or Italian seasoning for extra flavor. Adjust consistency by adding more broth to thin the soup.
