Preparation

  • Cook the bacon in a large pot over medium heat until crispy, about 5-7 minutes. Remove the bacon and set aside on a paper towel to drain, keeping the drippings.
  • In the same pot, add the chopped onion and minced garlic. Sauté for about 3-4 minutes until the onion is translucent and the garlic is fragrant.
  • Add the diced potatoes and the broth to the pot. Bring to a boil, then reduce heat, cover, and let simmer for about 15-20 minutes until potatoes are tender.
  • Mash the potatoes to your desired consistency, keeping some chunks for texture or blending it all for a creamy soup.
  • Stir in the heavy cream and shredded cheddar cheese, mixing until melted and blended. Adjust salt and pepper to taste.
  • Ladle the soup into bowls and top with crispy bacon and a sprinkle of chives or green onions.

Notes

For richer flavor, use homemade broth. Add a pinch of cayenne pepper for heat. Substitute half-and-half for a lighter version.
