Ingredients
  

For the enchiladas

  • 12 pieces corn tortillas These are your base and hold all the flavors together.
  • 1 pound fresh shrimp, peeled and deveined Fresh shrimp creates a sweet, succulent flavor.
  • 1 medium onion, chopped Adds a wonderful depth of flavor.
  • 1 piece red bell pepper, chopped Brightens up the dish.
  • 2 cloves garlic, minced Brings a lovely aroma.
  • 2 cups Monterey Jack cheese, shredded Melts beautifully for creaminess.
  • 1 cup sour cream Adds a creamy tartness.
  • 1 cup heavy cream For extra creamy goodness.
  • 1 teaspoon chili powder Adds warmth and flavor.
  • to taste salt and pepper Always season to taste.
  • as needed Olive oil for cooking For sautéing the vegetables.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, heat a little olive oil over medium heat. Add chopped onion, red bell pepper, and minced garlic. Sauté until the onion becomes translucent and the bell pepper softens.
  • Add the fresh shrimp, sprinkle with chili powder, salt, and pepper. Cook until the shrimp turn pink.
  • In a bowl, mix together sour cream, heavy cream, and half of the shredded Monterey Jack cheese.
  • Fill each corn tortilla with the shrimp and vegetable mixture, roll it up gently, and place it seam-side down in a greased baking dish.
  • Pour the creamy sauce over the enchiladas and sprinkle the remaining Monterey Jack cheese on top.
  • Cover with aluminum foil and bake for 20-25 minutes. Remove the foil and bake for an additional 5-10 minutes until golden and bubbly.
  • Let them cool for a few minutes before serving hot.

Notes

Feel free to swap shrimp for chicken or vegetables. Store leftovers in the fridge for about 3-4 days and reheat in the oven.
