Ingredients

  • 4 cups Fresh Spinach Use fresh spinach or thawed frozen spinach.
  • 8 oz Mushrooms (sliced) Any variety of mushrooms can be used.
  • 1 medium Onion (sliced) Slice thinly for even caramelization.
  • 1 cup Heavy Cream This adds creaminess to the sauce.
  • 2 tablespoons Butter For sautéing and added flavor.
  • 1 tablespoon Olive Oil Used in combination with butter for cooking.
  • 2 cloves Garlic (minced) Adjust according to garlic preference.
  • to taste Salt Season to your liking.
  • to taste Pepper Freshly ground black pepper is preferred.
  • 1/4 cup Parmesan Cheese (optional, grated) Optional for added flavor.

Instructions
 

Caramelizing the Onions

  • Heat the olive oil and 1 tablespoon of butter in a large skillet over medium heat.
  • Add the sliced onions and cook for about 10 minutes until they caramelize to a golden brown.

Sauté the Garlic

  • Add the minced garlic to the skillet and cook for about a minute until fragrant.

Add the Mushrooms

  • Introduce the sliced mushrooms to the mix and sauté for 5-7 minutes until they become soft.

Incorporate the Spinach

  • Add in 4 cups of fresh spinach (or thawed frozen spinach) and stir until wilted.

Pour in the Heavy Cream

  • Pour in 1 cup of heavy cream and let it simmer for a few minutes while stirring occasionally.

Season to Taste

  • Season the sauce with salt and pepper to your taste.

Add Parmesan Cheese

  • Stir in 1/4 cup of grated Parmesan cheese until melted and combined.

Final Touches

  • Give the sauce a final taste and adjust seasoning if necessary. Add fresh herbs if desired.

Serve Immediately

  • Ladle the sauce over your favorite protein, pasta or serve in a bread bowl.

Notes
