Filling and Topping

  • 2 cups fresh strawberries, sliced The star of the dish; you can use any berries.
  • 1 cup heavy cream To whip and top your crepes.
  • 1 tablespoon powdered sugar For sweetening the whipped cream.

Preparation

  • In a large mixing bowl, whisk together all-purpose flour, eggs, milk, sugar, and a pinch of salt. Let the batter rest for about 20 minutes.

Whipping the Cream

  • Using a separate bowl, whip up the heavy cream with powdered sugar until you achieve soft peaks.

Cooking the Crepes

  • Heat a non-stick skillet over medium heat and melt a small pat of butter.
  • Pour a ladle of crepe batter into the skillet, swirling to cover the bottom evenly. Cook for 2-3 minutes until edges begin to lift, then flip and cook for an additional minute. Repeat with remaining batter.

Assembling and Serving

  • Take a warm crepe, place a spoonful of whipped cream in the center, top with strawberry slices, and fold over.
  • Serve warm, drizzled with more whipped cream and additional strawberries.

Notes

For the lightest crepes, ensure eggs and milk are at room temperature. Use a measuring cup for even crepes and store leftover batter and whipped cream in the fridge.
