  • 1 lb chicken breast, sliced Boneless, skinless chicken is my go-to. It's juicy and quick to cook!
  • 2 cups baby spinach Adds color and nutrients; wilts down beautifully in the sauce.
  • 1/2 cup sundried tomatoes, chopped Contributes a rich, tangy flavor that complements the creaminess perfectly.
  • 1 cup heavy cream Makes everything oh-so-creamy and decadent.
  • 1/2 cup Parmesan cheese, grated Gives a wonderful flavor and thickness to the sauce.
  • 3 cloves garlic, minced You can never have too much garlic in Italian cooking!
  • 2 tbsp olive oil For cooking the chicken and adding that rich flavor.
  • Salt and pepper to taste Seasoning is crucial to bring out all those wonderful flavors.
  • Fresh basil for garnish (optional) A bit of green on top really makes the dish pop!

Cooking Steps

  • Cook the pasta in a large pot of salted water according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add sliced chicken, season with salt and pepper, and cook until golden brown and cooked through, about 7-10 minutes.
  • Add minced garlic and chopped sundried tomatoes to the skillet. Cook for about 2 minutes.
  • Stir in heavy cream and let it come to a gentle simmer.
  • Mix in grated Parmesan cheese, stirring until melted into the cream.
  • Add baby spinach and drained pasta to the skillet. Toss everything together until the spinach wilts.
  • Taste and adjust seasoning with salt and pepper if needed.
  • Serve hot, garnished with fresh basil if desired.

Notes

For crispier chicken, avoid overcrowding the pan. Marinating the chicken with Italian herbs enhances flavor. Stir cheese in gradually to avoid lumps.
