  • 1 pound Chicken breast Boneless and skinless
  • 2 cups Baby spinach
  • 1/2 cup Sundried tomatoes
  • 4 cloves Garlic, minced
  • 8 ounces Fettuccine pasta
  • 1 cup Parmesan cheese, grated
  • 1 teaspoon Italian seasonings
  • 1 cup Cream
  • 2 tablespoons Olive oil
  • To taste Salt
  • To taste Pepper

Preparation

  • Fill a large pot with water and add a generous pinch of salt. Bring it to a boil for the fettuccine.
  • Cook the fettuccine pasta according to the package instructions until al dente. Drain and set aside, reserving some pasta water.
  • Season chicken breast with salt and pepper.

Cooking

  • In a large skillet, heat olive oil over medium heat. Add the chicken and cook until golden brown and no longer pink in the center, about 6-7 minutes per side. Remove and let rest, then slice into bite-sized pieces.
  • In the same skillet, add more olive oil if needed and sauté the minced garlic for about a minute until fragrant.
  • Add sundried tomatoes and baby spinach to the skillet, stirring together until the spinach wilts, about 2 minutes.
  • Pour in the cream and mix in the grated Parmesan cheese and Italian seasonings, stirring until combined.
  • Add sliced chicken back to the skillet and toss to combine all flavors.
  • Gently toss the cooked fettuccine in the sauce, using reserved pasta water to loosen if necessary.
  • Taste and adjust seasoning with more salt and pepper if needed.

Serving

  • Serve warm, garnished with additional Parmesan cheese and fresh herbs if desired.

Notes

For a crunchy topping, consider adding toasted pine nuts or breadcrumbs. This dish is flexible; feel free to add more vegetables like bell peppers or zucchini.
