Ingredients
  

Vegetables

  • 2 medium zucchinis, sliced
  • 2 medium yellow squashes, sliced
  • 2 cloves garlic, minced

Sauce

  • 1 cup heavy cream Can be substituted with half-and-half or dairy-free alternatives.
  • 1 cup shredded cheese (cheddar or mozzarella) Other types of cheese can be used.

Oils and Seasoning

  • 2 tablespoons olive oil
  • to taste salt
  • to taste pepper

Garnish

  • to taste fresh parsley Optional

Instructions
 

Cooking

  • Heat the olive oil in a skillet over medium heat.
  • Add the minced garlic and sauté for about 1 minute until fragrant.
  • Add the sliced zucchini and yellow squash to the skillet and cook until tender, about 5-7 minutes.
  • Pour in the heavy cream, stirring to combine, and bring to a simmer.
  • Add the shredded cheese and stir until melted and creamy.
  • Season with salt and pepper to taste.
  • Serve warm, garnished with fresh parsley if desired.

Notes

Store leftovers in an airtight container for up to 3-4 days in the refrigerator. Reheat gently in a skillet or microwave.
