Ingredients
  

For the crust

  • 1 cup Graham cracker crumbs
  • 1/2 cup Butter, melted
  • 1/4 cup Sugar

For the cheesecake filling

  • 16 oz Cream cheese, softened Make sure it is at room temperature for a smooth filling.
  • 3/4 cup Sugar
  • 1 tbsp Vanilla bean or vanilla extract
  • 3 large Eggs Add one at a time, mixing well.
  • 1/2 cup Heavy cream

For the topping

  • 2 tbsp Sugar For bruleeing the top.

Preparation

  • Preheat your oven to 325°F (160°C).
  • In a bowl, mix graham cracker crumbs with melted butter and sugar to create the crust. Press this mixture into the bottom of a baking dish.
  • In another bowl, beat cream cheese until smooth. Add sugar, vanilla, and eggs one at a time, mixing well.
  • Stir in heavy cream until fully combined.
  • Pour the cheesecake filling over the crust in the baking dish.

Baking

  • Bake in the preheated oven for about 30-35 minutes or until set.
  • Let it cool and refrigerate until fully chilled.

Bruleeing and Serving

  • Before serving, sprinkle a thin layer of sugar on top and use a kitchen torch to brulee the sugar until it caramelizes.
  • Slice into bars and enjoy!

Notes

Serve these cheesecake bars chilled, alone or with a scoop of ice cream or fresh berries. Store any leftovers in an airtight container in the refrigerator for up to a week. For longer storage, freeze them without the caramelized topping, thawing in the fridge when ready to enjoy.
