Ingredients
  

For the Fritters

  • 250 g grated butternut squash Squeeze out excess moisture for crispiness.
  • 1 whole grated potato Squeeze out excess moisture for crispiness.
  • 2 large eggs Bind the mixture.
  • to taste Salt
  • to taste Pepper
  • as needed oil Oil for frying Use enough to prevent sticking.

For the Garlic Dip

  • 2-3 cloves Garlic Minced.
  • 1 cup Yogurt
  • 1 tbsp Lemon juice
  • to taste Salt

Instructions
 

Preparation

  • In a large bowl, combine the grated butternut squash, grated potato, and eggs. Season with salt and pepper to taste.
  • For the garlic dip, mix minced garlic with yogurt, lemon juice, and salt in a bowl.

Cooking

  • Heat oil in a frying pan over medium heat.
  • Form small patties from the fritter mixture and fry them until golden brown on both sides.
  • Serve the fritters hot with the garlic dip.

Notes

Store leftover fritters in an airtight container in the refrigerator for up to 3 days. Reheat in a hot frying pan to regain crispiness. The garlic dip can be stored in the fridge for up to a week.
