  • 4 pieces Boneless, skinless chicken breasts
  • 1 cup All-purpose flour For coating
  • 2 large Eggs Beaten
  • 1 cup Breadcrumbs (preferably Italian)
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1/2 cup Grated Parmesan cheese
  • as needed Oil (for frying) Approx. 1/4 inch deep
  • Lemon wedges For serving

Preparation

  • Place the boneless, skinless chicken breasts between two pieces of plastic wrap and pound to an even thickness of about 1/2 inch.
  • Set up a breading station: In one dish, add the flour; in another, whisk the eggs; and in a third, mix breadcrumbs, garlic powder, onion powder, salt, black pepper, and Parmesan cheese.

Breading the Chicken

  • Dip each chicken piece into the flour, shaking off excess, then into the egg, and finally into the breadcrumb mixture, making sure to coat well.

Cooking

  • Heat oil in a large skillet over medium-high heat until a drop of water sizzles.
  • Fry the chicken for about 4-5 minutes on each side, or until golden brown and the internal temperature reaches 165°F.
  • Transfer the cooked chicken to a paper towel-lined plate to drain excess oil and let it rest.

Serving

  • Serve hot with lemon wedges, squeezing fresh lemon juice over the chicken before eating.

Notes

Feel free to add fresh herbs like rosemary to the breadcrumb mixture for extra flavor. Leftovers can be stored in an airtight container for up to three days. Reheat in a preheated oven at 350°F for about 10-15 minutes to maintain crispiness.
