Preparation

  • Preheat your skillet over medium heat and add enough vegetable oil to cover the bottom.
  • Season the chicken breasts with salt and pepper.
  • Dredge each chicken breast in flour, shaking off any excess.
  • Dip the floured chicken into the beaten eggs, then coat with breadcrumbs, pressing gently to adhere.

Cooking

  • Place chicken in the hot oil and cook for about 3-4 minutes per side, until golden brown and cooked through.
  • Remove from the skillet and drain on paper towels.

Serving

  • Serve warm with lemon wedges.

Notes
