  • 4 pieces chicken breasts Boneless and skinless
  • 1 cup flour For breading
  • 2 pieces eggs Beaten
  • 1 cup breadcrumbs For coating
  • 1/2 cup grated Parmesan cheese Mixed with breadcrumbs for added flavor
  • 2 tablespoons olive oil For frying

For the Sauce

  • 8 ounces mushrooms, sliced Any variety can be used
  • 2 cups heavy cream For a rich sauce
  • 1/2 cup chicken broth To adjust sauce consistency
  • Salt and pepper to taste
  • Fresh parsley for garnish

Preparation

  • Preheat your oven to 400°F (200°C).
  • Season the chicken breasts with salt and pepper.
  • Set up a breading station with flour, beaten eggs, and a mixture of breadcrumbs and Parmesan.
  • Dredge each chicken breast in flour, then egg, and finally coat with breadcrumbs.

Cooking

  • Heat olive oil in a skillet and cook the chicken until golden brown, about 4-5 minutes per side.
  • Transfer the chicken to a baking dish and bake for 15-20 minutes until fully cooked.
  • In the same skillet, sauté mushrooms until browned.
  • Add heavy cream and chicken broth, bringing to a gentle simmer.
  • Season the sauce with salt and pepper.
  • Serve the crispy chicken topped with the mushroom sauce and garnish with parsley.

Notes

Serve hot with steamed vegetables, salad, rice, or pasta. Make sure the oil is hot enough before adding the chicken for a nice golden crust. Don't skip the baking step to ensure the chicken cooks thoroughly and stays crispy.
