Fritter Ingredients

  • 1 cup corn kernels (fresh or canned)
  • 1/2 cup all-purpose flour Can substitute with gluten-free flour blend
  • 1/4 cup cornmeal
  • 1/4 cup milk
  • 1 each egg
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped green onions Can substitute with herbs like cilantro or parsley
  • as needed cup oil for frying Ensure oil is hot enough before frying

Instructions
 

Preparation

  • In a bowl, mix the corn kernels, flour, cornmeal, milk, egg, baking powder, salt, and pepper until well combined.
  • Fold in the chopped green onions.

Cooking

  • Heat oil in a skillet over medium heat.
  • Drop spoonfuls of the batter into the hot oil and flatten slightly.
  • Fry until golden brown on each side, about 3-4 minutes.
  • Remove and drain on paper towels. Serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or in the oven at 350°F (175°C) for about 10 minutes. For extra flavor, consider adding grated cheese or spices to the batter.
