Ingredients
  

Mushrooms and Coating

  • 1 package fresh enoki mushrooms, trimmed (approximately 7 ounces)
  • 1/2 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon paprika
  • as needed Oil for deep frying

Instructions
 

Preparation

  • Gently rinse the enoki mushrooms and pat them dry with paper towels.
  • In a bowl, whisk together the flour, cornstarch, salt, pepper, garlic powder, onion powder, and paprika.
  • Add the dried enoki mushrooms to the bowl and toss gently to coat them evenly.

Frying

  • Heat the oil in a deep fryer or large pot to 350°F (175°C).
  • Carefully add the breaded mushrooms to the hot oil, frying in batches if necessary.
  • Fry for 2-3 minutes, or until golden brown and crispy.
  • Remove the fried mushrooms from the oil and drain on a wire rack or paper towel-lined plate.

Serving

  • Serve immediately while still hot and crispy, either plain or with your favorite dipping sauces.

Notes

Make sure the mushrooms are dry before coating for better batter adherence. For a spicy kick, add cayenne pepper to the flour mixture. Fry in small batches to avoid overcrowding.
