Ingredients
  

For the Coating

  • 1.5 cups panko breadcrumbs For added crunch, consider using seasoned panko.
  • 1 tablespoon mayonnaise Adds moisture and flavor to the batter.
  • 1.5 tablespoons dijon mustard Can be adjusted for taste.
  • 2 tablespoons flour Helps to bind the coating.
  • 0.5 teaspoon salt Adjust based on preference.
  • Black pepper To taste.

For the Chicken

  • 500 g chicken tenderloins Fresh chicken for best flavor.

For Baking

  • Oil spray To coat the breadcrumbs.

Preparation

  • Preheat the oven to 200°C/390°F (180° fan-forced).
  • Spread the panko breadcrumbs on a baking tray and spray lightly with oil. Bake for 3 to 5 minutes until light golden and then transfer to a bowl.
  • Place a wire rack on a baking tray to catch drippings while baking.

Batter Preparation

  • In a bowl, whisk together the egg, mayonnaise, dijon mustard, flour, salt, and black pepper.

Coating the Chicken

  • Dredge the chicken tenderloins in the batter, ensuring they are well coated.
  • Roll the coated chicken tenders in the toasted panko breadcrumbs until fully covered.

Baking

  • Arrange the chicken tenders on the wire rack and bake for 15 to 20 minutes, or until cooked through and golden brown.

Notes

Serve with your favorite dipping sauces and sides like fries, salad, or steamed vegetables. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze on a baking sheet for 3 months. For extra crunch, use seasoned panko.
