Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large pot, bring water to a boil and add diced potatoes. Boil until tender, about 10 minutes.
  • Drain the potatoes and let them sit in the colander briefly to remove excess water.
  • In a mixing bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder until combined.

Assembly and Baking

  • Grease a 9x13 inch baking dish and layer the drained potatoes evenly across the bottom.
  • Pour the egg mixture over the potatoes and give it a gentle stir.
  • Sprinkle the shredded mozzarella cheese generously over the top.
  • Bake in the preheated oven for 25-30 minutes until the eggs are set and the cheese is golden and bubbly.

Serving

  • Let the dish cool for a few minutes before serving. Garnish with fresh parsley if desired.

Notes

For extra crispiness, consider broiling for a couple of minutes at the end. You can also mix in sautéed vegetables for added color and nutrition.
