  • olive oil Essential for achieving that crispy finish.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash and dry the russet potatoes thoroughly, then pierce each potato several times with a fork.
  • Rub each potato with olive oil and season with salt and pepper.
  • Place the seasoned potatoes directly on the oven rack or on a baking sheet, and bake for about 45 minutes until tender.
  • Let the potatoes cool for a few minutes, then cut each in half lengthwise and scoop out most of the insides, leaving enough skin to hold the toppings.
  • Brush the insides of the potato skins with olive oil and place them skin-side down on a baking sheet.
  • Bake the skins for another 10-15 minutes until golden brown and crispy.

Topping and Final Cooking

  • Load the crispy skins with shredded cheddar and Monterey Jack cheese, crumbled bacon, and chopped green onions.
  • Return the loaded potato skins to the oven for about 5-7 minutes, or until the cheese is melted and bubbly.
  • Let them cool for a moment and serve warm.

Notes

For extra crispy skins, try broiling them for the last minute or two. You can sprinkle red pepper flakes or jalapeños on top for a kick. Serve with dipping sauces like sour cream or ranch dressing.
