Ingredients
  

For the Potato Skins

  • 4 large large russet potatoes Perfect starchy texture for baking.
  • 1 cup shredded sharp cheddar cheese Adds delightful tanginess.
  • 1 cup shredded Monterey Jack cheese Melts beautifully and adds creaminess.
  • 1 cup cooked and crumbled bacon Use turkey bacon for a lighter option.
  • 1/4 cup sliced green onions For color and freshness.
  • 1 tbsp olive oil For brushing on the skins.
  • to taste salt and pepper Enhances flavor.

Preparation

  • Preheat your oven to 400°F (200°C).
  • Rinse the potatoes thoroughly under cold water and scrub them to remove dirt. Pat dry with a towel.
  • Poke several holes in each potato with a fork to allow steam to escape.
  • Bake the potatoes directly on the oven rack or on a baking sheet for about 45 to 60 minutes until tender.
  • Let the potatoes cool for a few minutes to make them easier to handle.

Assembly

  • Cut each potato in half lengthwise and scoop out some of the flesh, leaving about a 1/4-inch border.
  • Brush the insides of each potato skin with olive oil and sprinkle with salt and pepper.
  • Place the potato skins cut side down on a baking sheet and bake for an additional 10 to 15 minutes until crispy.
  • Flip the skins over and fill each with shredded cheddar and Monterey Jack cheese, followed by crumbled bacon.
  • Return to the oven and bake for another 5 to 10 minutes until the cheese is melted and bubbly.
  • Sprinkle green onions over the top before serving.

Notes

To make skins even crispier, consider broiling for the last couple of minutes. Don't overcrowd the baking sheet for crispy results. Serve with various dips like sour cream, ranch, or salsa.
