Ingredients

For the creamy herb sauce

Instructions
 

Preparation

  • Preheat the oven to 425°F (220°C).
  • Cut the cauliflower into florets and toss with olive oil, garlic powder, salt, and pepper.

Roasting the Cauliflower

  • Spread the cauliflower on a baking sheet in a single layer.
  • Roast for 25-30 minutes or until golden and crispy, flipping halfway through.

Making the Sauce

  • While the cauliflower is roasting, prepare the creamy herb sauce by mixing Greek yogurt, chopped herbs, lemon juice, salt, and pepper in a bowl.

Serving

  • Serve the roasted cauliflower hot, drizzled with the creamy herb sauce.

Notes

Store leftovers in airtight containers separately; cauliflower stays crispy for about 2 days, while the herb sauce lasts for about a week. For extra flavor, try adding paprika or cumin.
