Ingredients
  

For the roasted cauliflower

  • 1 large head cauliflower
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder

For the creamy herb sauce

  • 1/2 cup Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh herbs (like parsley, dill, or chives)
  • 1 clove garlic, minced

Instructions
 

Preparation

  • Preheat the oven to 425°F (220°C).
  • Cut the cauliflower into florets and place them on a baking sheet.
  • Drizzle with olive oil, garlic powder, salt, and pepper. Toss to coat.

Cooking

  • Roast for 25-30 minutes or until golden and crispy.
  • While the cauliflower is roasting, mix the yogurt, lemon juice, herbs, and minced garlic in a bowl to make the herb sauce.

Serving

  • Serve the roasted cauliflower warm, drizzled with the creamy herb sauce.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to three days. Reheat in the oven to regain some of the crispiness. Avoid using the microwave, as it can make the cauliflower soggy. For extra flavor, consider adding spices like paprika or cayenne pepper to the oil mixture.
