Ingredients
  

For the roasted cauliflower

  • 1 head cauliflower, cut into florets
  • 2 tablespoons olive oil Make sure the cauliflower is well coated.
  • Salt and pepper to taste

For the creamy herb sauce

  • 1 cup Greek yogurt Can be substituted with dairy-free alternative for a vegan version.
  • 2 tablespoons mayonnaise Can be substituted with a vegan alternative.
  • 2 tablespoons fresh herbs (such as parsley, dill, or chives), chopped Feel free to customize with your favorite herbs.
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced

Instructions
 

Preparation

  • Preheat the oven to 425°F (220°C).
  • Toss the cauliflower florets with olive oil, salt, and pepper on a baking sheet.

Roasting

  • Roast in the preheated oven for 25-30 minutes, or until golden brown and crispy.

Sauce Preparation

  • While the cauliflower is roasting, mix together the Greek yogurt, mayonnaise, chopped herbs, lemon juice, and minced garlic in a bowl for the sauce.

Serving

  • Once the cauliflower is done, drizzle the creamy herb sauce over the top and serve.

Notes

Store leftover roasted cauliflower and cream sauce separately in airtight containers. The roasted cauliflower can be kept in the fridge for up to 3 days; the herb sauce is best consumed within 2 days. Reheat the cauliflower in the oven for a few minutes to regain its crispiness. Add more chopped herbs or a sprinkle of chili flakes for an extra kick!
