Ingredients
  

For the Cauliflower

  • 1 head Cauliflower, cut into florets
  • 1 cup Panko breadcrumbs Use fresh for best results
  • 1/2 cup Grated Parmesan cheese
  • 2 tablespoons Olive oil
  • Salt to taste
  • Pepper to taste

For the Herb Sauce

  • 1/2 cup Mayonnaise
  • 1 tablespoon Lemon juice
  • 1 tablespoon Fresh herbs (such as parsley, dill, or basil), chopped
  • 1 clove Garlic, minced

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Cut the cauliflower into florets of even size and place them in a large mixing bowl.
  • Drizzle the cauliflower with olive oil, sprinkle with salt and pepper, and toss until well coated.
  • In another bowl, mix the panko breadcrumbs and grated Parmesan cheese.
  • Add the breadcrumb mixture to the cauliflower and toss again to ensure even coating.

Cooking

  • Spread the coated cauliflower on a baking sheet in a single layer.
  • Roast in the preheated oven for about 25-30 minutes, checking halfway through and giving it a shake.
  • While the cauliflower roasts, prepare the herb sauce by combining mayonnaise, lemon juice, chopped herbs, and minced garlic in a small bowl. Mix well.
  • After 25-30 minutes, check the cauliflower; it should be golden brown and crispy. If not, continue roasting for a few more minutes.
  • Serve the roasted cauliflower warm, drizzled with the herb sauce.

Notes

For extra texture, serve with a sprinkle of fresh herbs on top. Store leftovers in an airtight container in the fridge; reheat in the oven.
