Ingredients
  

Vegetables

  • 1 medium zucchini, sliced into 1/4-inch rounds
  • 1 medium yellow squash, sliced into 1/4-inch rounds
  • 2-3 Roma tomatoes, sliced into 1/4-inch rounds

Seasoning

  • 2 tbsp olive oil
  • Salt and pepper to taste

Topping

  • Parmesan cheese, for sprinkling

Preparation

  • Preheat the oven to 425°F (220°C).
  • In a large bowl, toss the sliced zucchini, yellow squash, and tomatoes with olive oil, salt, and pepper until evenly coated.
  • Spread the vegetables in a single layer on a baking sheet.

Roasting

  • Roast for about 20-25 minutes, or until the vegetables are tender and golden brown.
  • Remove from the oven and sprinkle with grated Parmesan cheese.
  • Return to the oven for an additional 5 minutes, until the cheese is melted and bubbly. Serve warm.

Notes

For extra crispiness, ensure vegetables are spread out in a single layer. You can add bell peppers or red onion for more flavor. Adjust the Parmesan to your taste, and consider using a dairy-free alternative if preferred. Adding herbs like thyme or rosemary enhances flavor further.
