  • 2 pounds Beef stew meat
  • 2 cups Onions, chopped
  • 2 cups Carrots, sliced
  • 2 cups Potatoes, diced
  • 1 cup Celery, sliced
  • 4 cloves Garlic, minced
  • 1 cup Red wine Can be substituted with beef broth or vinegar.
  • 4 cups Beef broth
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 piece Bay leaf
  • 2 tablespoons Olive oil (optional for browning beef) Enhances flavor.

Instructions
 

Preparation

  • If you have time, brown the beef in a skillet with olive oil over medium-high heat for added flavor.
  • Chop the potatoes, slice the carrots and celery, chop the onions, and mince the garlic.
  • Transfer the browned beef to the crock pot, and add all the chopped vegetables.
  • Pour in the red wine and beef broth, then stir in the tomato paste.
  • Season with dried thyme, salt, black pepper, and add the bay leaf. Stir gently to combine.
  • Cover the crock pot and set it to cook on low for 7-8 hours or high for 4-5 hours.
  • When nearing the end of the cooking time, check tenderness; the beef should be fork-tender.
  • Remove the bay leaf and taste the stew to adjust seasoning if necessary.
  • Ladle the stew into bowls and serve hot.

Notes

Feel free to customize with herbs or additional vegetables. Leftovers can be stored in an airtight container for 3-4 days.
