  • 1 medium onion, chopped
  • 2 cloves garlic, minced

Preparation

  • Place the broccoli, onion, and garlic in the crockpot.
  • Pour in the vegetable broth and season with salt and pepper.

Cooking

  • Cook on low for 360 minutes (6 hours) or high for 240 minutes (4 hours).
  • Once the vegetables are tender, blend the soup until smooth using an immersion blender or by transferring to a regular blender in batches.
  • Stir in the heavy cream and heat through.

Serving

  • Serve warm, garnished with shredded cheese if desired.

Notes

For added flavor, consider sautéing the onion and garlic in a pan before adding them to the crockpot. Additional vegetables like carrots or potatoes can be included for extra heartiness. For a chunkier texture, blend only half of the soup and leave the rest as is. Customizable with spices like nutmeg or red pepper flakes for some heat.
