Ingredients
  

Main Ingredients

  • 3 medium Potatoes, diced Russets, Yukon golds, or red potatoes work great.
  • 1 lb Beef steak, thinly sliced Freeze for 30 minutes before slicing for easier handling.
  • 1 Onion, diced
  • 1 Green bell pepper, diced
  • 2 cups Shredded cheddar cheese Sprinkle on top 30 minutes before serving.
  • 1 cup Cream cheese, softened
  • 1 cup Beef broth
  • 2 tbsp Worcestershire sauce
  • Salt and pepper, to taste Season layers between ingredients.
  • Chopped parsley, for garnish Optional, for color.

Instructions
 

Preparation

  • Wash and dice your potatoes into bite-sized pieces.
  • Thinly slice the beef steak. Freezing for 30 minutes beforehand makes this easier.
  • Dice the onion and green bell pepper.

Assembly

  • Layer the diced potatoes in the bottom of the crockpot.
  • Add the sliced beef followed by the diced onions and green bell peppers.
  • In a mixing bowl, combine cream cheese, beef broth, Worcestershire sauce, salt, and pepper. Whisk until smooth.
  • Pour the creamy sauce evenly over the layered ingredients in the crockpot.

Cooking

  • Cover the crockpot and set to cook on low for 6-8 hours or high for 3-4 hours.
  • About 30 minutes before serving, sprinkle the shredded cheddar cheese on top and cover to let it melt.

Serving

  • Once cooked, sprinkle chopped parsley on top and serve hot.

Notes

Season layers as you go for best flavor. Pair with a fresh salad or garlic bread. Leftovers can be stored in the refrigerator for up to three days.
