  • 1 lb chicken breasts Fresh or pasture-raised for great flavor.
  • 2 cups chicken broth Essential for keeping the chicken moist.
  • 1 can cream of chicken soup Adds creamy richness.
  • 1 cup carrots, diced Brings sweetness and texture.
  • 1 cup celery, diced Gives crunch and aroma.
  • 1 large onion, chopped Adds depth of flavor.
  • 1 tsp garlic powder Enhances comfort food flavor.
  • 1 tsp thyme Elevates flavors.
  • to taste Salt and pepper For seasoning.
  • 1 can refrigerated biscuit dough For soft, fluffy dumplings.

Instructions
 

Preparation

  • Place the chicken breasts in the bottom of your crockpot.
  • Pour 2 cups of chicken broth over the chicken to submerge it.
  • Add the can of cream of chicken soup and mix well with the broth.
  • Toss in diced carrots, celery, and chopped onion.
  • Sprinkle garlic powder, thyme, salt, and pepper over the top.

Cooking

  • Cover the crockpot and cook on low for 6-8 hours or on high for 4-5 hours.
  • About 30 minutes before serving, shred the chicken using two forks.
  • Break the refrigerated biscuit dough into smaller pieces and drop them on top of the chicken mixture.
  • Cover and cook for an additional 30 minutes until dumplings are fluffy.
  • Serve warm and enjoy!

Notes

This dish is flexible. Substitute ingredients as needed and watch cooking times to avoid overcooking dumplings.
