Preparation

  • Ensure you have enough time, set aside 6-7 hours on low or 3-4 hours on high.
  • Optional: Sauté diced onion until translucent before adding to the CrockPot.
  • Add cream of mushroom soup and cheddar cheese soup to the CrockPot and stir until well-combined.
  • Add dried thyme, garlic powder, and black pepper, mixing well to infuse flavor.
  • Add chicken thighs to the mixture and coat well.
  • Pour chicken broth into the mixture and stir to blend.
  • Cover the CrockPot and set to low or high.
  • Approximately 30 minutes before serving, stir in mixed vegetables.
  • Before serving, give everything a good stir. Garnish with fresh herbs or cheese if desired.
  • Serve and enjoy while watching satisfied smiles from your family.

Notes

To elevate the dish, use bone-in chicken thighs for richer flavor, and consider adding fresh herbs like rosemary for a lovely touch. Adjust the thickness of the dish with broth as needed. You can add a Bay Leaf while cooking for additional depth but remove it before serving.
