Ingredients
  

For the Chicken

  • 4 pieces Boneless, skinless chicken breasts
  • 2 cups Chicken broth Low-sodium can be used for a lighter option.
  • 1 can Cream of chicken soup Low-fat can be used for a healthier choice.
  • 1 cup Frozen mixed vegetables Feel free to use fresh veggies instead.
  • 1 teaspoon Onion powder
  • 1 teaspoon Garlic powder
  • to taste Salt and pepper Adjust according to preference.

For the Dumplings

  • 1 cup Biscuit dough Use your favorite biscuit dough recipe.

Preparation

  • Place the chicken breasts at the bottom of your crockpot. Season lightly with salt and pepper.
  • In a bowl, combine the chicken broth and cream of chicken soup.
  • Add onion powder and garlic powder to the mixture.
  • Toss in the frozen mixed vegetables or fresh veggies of your choice.
  • Pour the mixture over the chicken in the crockpot.
  • Cover the crockpot and set it to cook on low for 6-7 hours or high for 3-4 hours.

Dumpling Preparation

  • About 30 minutes before cooking is done, open the lid and drop spoonfuls of biscuit dough on top of the chicken and broth.
  • Cover again and let the biscuit dough steam until it puffs up and turns golden brown.
  • Once ready, shred the chicken directly in the crockpot and mix with the dumplings and broth.

Serving

  • Ladle the chicken and dumplings into bowls and serve warm.

Notes

For more flavor, consider browning the chicken before putting it in the crockpot. Leftovers can be stored in an airtight container for up to three days.
