  • 1 lb ground beef Lean ground beef can be substituted with ground turkey.
  • 1 medium onion, chopped Adds flavor to the soup.
  • 1 can kidney beans Drained and rinsed.
  • 1 can black beans Drained and rinsed.
  • 1 can corn kernels Adds sweetness.
  • 1 can diced tomatoes Provides moisture and color.
  • 1 tbsp tomato paste Enhances the richness of the soup.
  • 2 cups beef broth Substitute with chicken broth if necessary.
  • 1 tsp garlic powder For seasoning.
  • 1 tsp chili powder Adjust to taste for spice.
  • 1 tsp cumin For depth of flavor.
  • 1 cup frozen peas Added toward the end of cooking.
  • 1 cup cheddar cheese, shredded Optional for serving.

Preparation

  • Brown the ground beef in a skillet over medium heat until cooked through.
  • Drain any excess fat from the beef.
  • Transfer the browned beef to the crockpot.
  • Add the chopped onion, kidney beans, and black beans to the crockpot.
  • Stir in the corn, diced tomatoes, and tomato paste.
  • Pour in the beef broth.
  • Sprinkle the garlic powder, chili powder, and cumin over the ingredients.
  • Stir to combine all ingredients thoroughly.
  • Cover the crockpot and cook on low for 6 to 7 hours or on high for 3 to 4 hours.
  • About 30 minutes before serving, stir in the frozen peas.
  • Serve hot, optionally topped with shredded cheddar cheese.

Notes

For added flavor, consider using fresh herbs or adjusting spices to personal preference. This soup can also be enjoyed with cornbread or a fresh salad.
