  • 1 pound baby carrots Adds sweetness and color.

  • 14.5 ounces chicken broth (optional) Enhances flavor and creates a delightful sauce.
  • 1/2 cup salted butter, melted Infuses rich flavor.
  • 3 tablespoons minced garlic Brings depth and aroma.
  • 1/4 teaspoon pepper Adds subtle kick.
  • 1 teaspoon salt Essential for enhancing flavors.
  • 1 teaspoon ground thyme Adds earthiness.
  • 1 teaspoon dried parsley Adds color and freshness.

Instructions
 

Preparation

  • Start by placing the chicken breasts in the bottom of your crock pot, spacing them out for even cooking.
  • In a small microwavable bowl, melt the butter for about a minute, being careful to avoid a butter explosion.
  • Once the butter is melted, stir in the minced garlic, salt, pepper, thyme, and parsley until well combined.
  • Pour about a quarter of the garlic butter mixture over the chicken.
  • Next, add the baby carrots and potato wedges around the chicken.
  • Pour the remaining butter mixture over the vegetables and mix gently to coat.
  • If using, pour the chicken broth into the pot now.
  • Cover the crock pot and set it to cook on high for 3 to 4 hours or low for about 6 hours.
  • Check for doneness about 30 minutes before it’s done, ensuring the chicken is cooked through and the veggies are tender.
  • When finished cooking, serve it hot directly from the pot, spooning the buttery broth over everything.

Notes

For extra flavor, sear the chicken briefly before adding it to the crock pot. If you prefer crispy skin, broil the chicken for a few minutes after cooking.
