  • 8 oz lasagna noodles, broken The heart of the soup.
  • 4 cups chicken or vegetable broth Forms the base of the soup.
  • 2 cups Ricotta cheese Creamy and indulgent.
  • 1 cup shredded mozzarella cheese For melty goodness.
  • 1/2 cup grated Parmesan cheese Adds a salty, nutty finish.
  • to taste Italian seasoning Pre-mixed blend of herbs.
  • to taste Salt and pepper Essential for flavor enhancement.

Preparation

  • In a skillet over medium heat, brown the Italian sausage and diced onion together until the sausage is browned and the onion is translucent. Drain excess fat.
  • Combine the browned sausage and onion in the crockpot with the diced tomatoes, broken lasagna noodles, and broth.
  • Add Italian seasoning, salt, and pepper, stirring to combine.
  • Cover the crockpot and cook on low for about 4 to 6 hours or on high for 2 to 3 hours until the noodles are tender.
  • In a separate bowl, mix together the Ricotta, mozzarella, and Parmesan cheeses.
  • Once the soup is ready, ladle into bowls and top each serving with the cheese mixture.

Notes

For a veggie boost, consider adding chopped spinach or kale. Serve with crunchy garlic bread or a simple salad.
