Main Ingredients

  • 1 pound sausage (Italian or your choice) Choose your preference for sausage flavor.
  • 2 pieces bell peppers (sliced) Any color bell peppers can be used.
  • 1 piece onion (sliced) Yellow or white onion works well.
  • 3 cloves garlic (minced) Fresh garlic for better flavor.
  • 1 can diced tomatoes (14.5 oz) Use canned or fresh diced tomatoes.
  • 1 teaspoon Italian seasoning Adjust according to taste preferences.
  • to taste salt and pepper Season accordingly.
  • for sautéing optional olive oil Optional for browning the sausage.

Instructions
 

Preparation

  • In a skillet, heat olive oil over medium heat. Add the sausage and brown it on all sides.
  • Transfer the browned sausage to the crockpot.
  • Add the sliced bell peppers, onion, garlic, diced tomatoes, Italian seasoning, salt, and pepper to the crockpot.
  • Stir to combine all the ingredients.

Cooking

  • Cover and cook on low for 6-8 hours or on high for 3-4 hours until the sausages are cooked through and the peppers are tender.

Serving

  • Serve hot, over rice, pasta, or in a sub roll.

Notes

For more flavor, you can add different spices or herbs according to your taste. If you like it spicy, try using spicy sausage or adding red pepper flakes. You can prep the ingredients the night before and keep them in the fridge.
