Ingredients
  

Main Ingredients

  • 24 oz Frozen tater tots Any brand will do, even seasoned ones.
  • 12 oz Shredded cheese Cheddar is classic, but feel free to mix it up.
  • 1 lb Breakfast sausage or cooked bacon Can also be made meatless.
  • 6 large Eggs
  • 1/2 cup Milk
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1/2 tsp Garlic powder Optional, but adds flavor.
  • 1/4 cup Green onion For garnish.

Preparation

  • Brown the sausage or bacon in a pan.
  • While the meat is cooking, whisk together the eggs, milk, salt, pepper, and garlic powder in a large bowl.

Layering and Cooking

  • Spray the Crockpot with nonstick spray.
  • Add half of the frozen tater tots as the base.
  • Layer half of the cooked sausage or bacon, half of the cheese, and half of the egg mixture.
  • Repeat the layers, finishing with cheese on top.
  • Cover and cook on low for 6 to 8 hours, or high for 3 to 4 hours, until eggs are set and the top is golden.
  • Let it cool for 10 minutes before serving.

Notes

You can prep the night before and refrigerate. For variety, try adding jalapeños for spice, swapping out meats, or topping with salsa, sour cream, or avocado.
