Ingredients
  

Vegetable Ingredients

  • 1 medium onion, diced
  • 6 ounces fresh baby spinach You can use frozen spinach if desired, just make sure to thaw and drain it.

Egg Mixture

  • 2 large eggs
  • ½ cup egg beaters (liquid substitute) You can replace with one more egg.

Batter Ingredients

  • ½ cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ cup feta cheese (optional) Can be substituted with cheddar or mozzarella.
  • Salt and pepper to taste

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a pan, sauté the diced onion until translucent.
  • Add the fresh spinach and cook until wilted.
  • In a mixing bowl, combine the eggs, egg beaters, flour, baking powder, salt, and pepper. Mix until smooth.
  • Stir in the sautéed onion and spinach mixture, and add feta cheese if desired.
  • Pour the mixture into a greased pie dish.

Baking

  • Bake for 30-35 minutes or until set and lightly golden on top.
  • Let it cool slightly before slicing and serving.

Notes

This quiche can be served warm or at room temperature. It pairs well with a simple salad, yogurt, or fresh fruit. Consider adding herbs like dill or thyme for extra flavor.
