Ingredients
  

Vegetables

  • 1 cup fresh spinach, chopped Can use frozen spinach if thawed and excess water is squeezed out.
  • 1 small onion, chopped Chop finely for even cooking.

Dairy

  • 1 cup feta cheese, crumbled Use more for a stronger flavor.
  • 1 cup milk

Eggs

  • 4 large eggs

Spices

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg

Other

  • 1 tablespoon olive oil For sautéing the vegetables.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent.
  • Add the spinach and cook until wilted.
  • In a mixing bowl, whisk together the eggs, milk, salt, pepper, and nutmeg.
  • Stir in the cooked spinach and onion mixture, along with the crumbled feta cheese.
  • Pour the mixture into a greased pie dish.

Baking

  • Bake for 30-35 minutes or until set and lightly golden on top.
  • Let it cool for a few minutes before slicing and serving.

Notes

You can serve this quiche warm or at room temperature. Pairs well with a simple salad or fresh fruit.
