  • 1 cup fresh spinach, chopped Ensure the spinach is dried well after washing.
  • 1 small onion, chopped
  • 1 cup feta cheese, crumbled Use freshly crumbled feta cheese for the best taste.
  • 4 large eggs
  • 1 cup milk You can substitute with dairy-free alternatives.
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1 tablespoon olive oil Used for sautéing.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a skillet, heat olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent.
  • Add the spinach and cook until it wilts.

Mixing

  • In a mixing bowl, whisk together the eggs, milk, salt, pepper, and nutmeg.
  • Stir in the cooked spinach and onion mixture, along with the crumbled feta cheese.

Baking

  • Pour the mixture into a greased pie dish.
  • Bake for 30-35 minutes or until the quiche is set and lightly golden on top.
  • Let it cool for a few minutes before slicing and serving.

Notes

This quiche can be served warm or at room temperature. It goes well with a light salad or some fresh fruit on the side. Pair with a dollop of yogurt or a sprinkle of fresh herbs for added flavor. Leftovers can be stored in an airtight container in the refrigerator for about 3-4 days or frozen for up to 2 months.
