Ingredients
  

For the cookie dough

  • 1 cup unsalted butter, softened Make sure your butter is softened for easier mixing.
  • 1 cup brown sugar If you prefer a chewier cookie, try adding a touch more brown sugar.
  • 1/2 cup coconut sugar (or white sugar)
  • 2 large eggs Can be substituted with flax eggs for a vegan version.
  • 1 tsp vanilla extract
  • 1 1/2 cups whole wheat flour Regular all-purpose flour can be used instead.
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon Feel free to adjust spices to your taste.
  • 2 cups rolled oats Use gluten-free oats for a gluten-free version.
  • 1 cup chopped dates (pitted)
  • 1/2 cup chopped walnuts or pecans Feel free to substitute with any of your favorites or omit entirely.
  • 1/2 cup shredded coconut
  • 1/2 cup dark chocolate chips Can be substituted with white chocolate.
  • 1/4 cup sunflower or pumpkin seeds (optional)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, brown sugar, and coconut sugar until smooth.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • In another bowl, combine the whole wheat flour, baking soda, salt, and ground cinnamon.
  • Gradually blend this dry mixture into the wet mixture.
  • Stir in rolled oats, chopped dates, walnuts or pecans, shredded coconut, dark chocolate chips, and seeds (if using).

Baking

  • Drop by rounded tablespoons onto ungreased baking sheets.
  • Bake for 10-12 minutes, or until golden brown.
  • Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

These cookies are best enjoyed fresh from the oven but can also be served at room temperature. Store in an airtight container at room temperature for up to one week. For longer storage, freeze in a freezer-safe container for up to three months.
