  • 1 tsp baking powder Leavening agent.
  • 1/2 tsp ground cinnamon Adds spice.
  • Pinch salt Balances sweetness.
  • 1/2 cup chopped walnuts Chop to desired size.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease a cake pan.
  • In a bowl, combine pitted dates and hot water, letting them sit until softened.
  • Once softened, mash the dates into a puree.

Mixing

  • In a mixing bowl, whisk together the eggs, oil, and vanilla extract.
  • Add the date puree to the egg mixture and mix well.
  • In another bowl, sift together the whole wheat or almond flour, baking powder, baking soda, cinnamon, and salt.
  • Gradually fold the dry ingredients into the wet ingredients until just combined.
  • Gently fold in the chopped walnuts.

Baking

  • Pour the batter into the prepared cake pan and smooth the top.
  • Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  • Allow to cool before serving.

Notes

For an extra touch of flavor, consider adding a bit of nutmeg or using a mix of different nuts. Make sure to mash the dates well for a smooth texture. If you prefer a lighter texture, you can whip the egg whites separately and fold them into the batter at the end.
