Ingredients
  

For the Lamb Chops

  • 4-6 chops lamb chops Choose ones with nice marbling for added flavor.
  • 2 tbsp olive oil Helps to achieve a lovely sear on the lamb.
  • 3 cloves garlic, minced Adds wonderful aroma and depth of flavor.
  • 2 tbsp balsamic vinegar Gives a nice tanginess.
  • 2 tbsp honey Balances the savory flavors.
  • 1 tbsp Dijon mustard Adds zing to the glaze.
  • 1 tbsp fresh rosemary, chopped Alternatively, use 1 tsp dried.
  • Salt and pepper to taste Essential to bring out the flavors.

For the Mashed Potatoes

  • 4 large russet potatoes, peeled and quartered Perfect for creamy mashed potatoes.
  • 4 tbsp unsalted butter For rich, velvety texture.
  • 1/2 cup heavy cream or milk Makes the potatoes extra dreamy.
  • Fresh chives or parsley for garnish (optional) A splash of color.

Preparation

  • Peel and quarter the russet potatoes. Toss them in a pot filled with salted water. Bring to a boil and cook until tender, about 15-20 minutes.
  • In a small bowl, whisk together minced garlic, balsamic vinegar, honey, Dijon mustard, and chopped rosemary to make the glaze.
  • Season the lamb chops generously with salt and pepper on both sides.

Cooking

  • Heat olive oil in a skillet over medium-high heat. Add the lamb chops and sear for about 3-4 minutes on each side.
  • Pour the glaze over the lamb chops, reduce heat to medium, and cook for an additional 2-3 minutes, spooning the glaze over the top.
  • Drain the potatoes and return them to the pot. Add unsalted butter and heavy cream (or milk), mash until creamy and smooth, seasoning with salt and pepper.

Serving

  • Let the lamb rest for a few minutes before serving. To plate, spoon creamy mashed potatoes onto a plate, lay the lamb chops on top, and drizzle with any remaining glaze.

Notes

For perfect results, ensure olive oil is hot before adding lamb, and let the lamb rest after cooking for juiciness. Use a ricer for smoother potatoes if desired.
