  • 2 large Potatoes Cut into even-sized chunks.
  • ¼ cup Butter Can substitute with olive oil for a healthier option.
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • to taste Salt Adjust according to taste.
  • to taste Pepper Adjust according to taste.
  • 2 cups Vegetable broth Low sodium preferred.
  • ½ cup Cream (optional) Add for a richer flavor.

Preparation

  • Gather all your ingredients and wash the green beans and slice the potatoes.

Cooking

  • Melt the butter in a large pot over medium heat.
  • Sauté the diced onion and minced garlic until the onions become translucent, about 3-5 minutes.
  • Add chopped potatoes and green beans, stirring to coat them in the buttery mixture.
  • Season with salt and pepper to taste.
  • Pour in the vegetable broth, ensuring everything is covered. Cover the pot and let it simmer on low heat for 20-25 minutes.
  • If desired, stir in cream for a richer flavor.
  • Taste and adjust seasoning if necessary.
  • Once the potatoes are tender, serve warm.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat on low heat before serving.
