  • 14 hard-cooked eggs Make sure your eggs are hard-cooked well to avoid runny yolks.
  • 1/2 cup mayonnaise For creaminess.
  • 1/2 cup sour cream For tanginess.

Preparation

  • Cut the eggs in half lengthwise.
  • Scoop out the yolks and place them in a bowl.
  • Mash the yolks until smooth, and mix in the mayonnaise and sour cream.
  • Spoon or pipe the mixture back into the egg whites.
  • Chill in the fridge before serving.

Notes

Serve the eggs chilled on a platter, looking pretty on a bed of lettuce or with a sprinkle of paprika on top. Keep the eggs in an airtight container in the fridge for up to two days. It's best to add any extra toppings just before serving. You can add a pinch of mustard or hot sauce to the yolk mixture for extra zest, or mix in chopped pickles for a crunchy twist.
