  • 1 cup Sharp cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded For creaminess.

  • 1/4 cup Butter, melted Enhances richness.

Seasonings and Additions

  • 1 teaspoon Salt To taste.
  • 1/2 teaspoon Black pepper To taste.
  • 1 cup Chopped green onions For flavor and garnish.
  • 1/2 teaspoon Paprika Optional, for color.

Preparation

  • Preheat the oven to 375°F (190°C).
  • Wash and dice the potatoes into 1-inch pieces, leaving the skins on.
  • In a large mixing bowl, combine diced potatoes, shredded cheeses, sour cream, melted butter, and seasonings. Mix well.

Baking

  • Transfer the potato mixture into a greased casserole dish.
  • Spread evenly and cover with foil.
  • Bake in the preheated oven for 30 minutes.
  • Remove foil and bake for an additional 15 minutes, or until golden and bubbly.

Notes

You can prep these potatoes ahead of time and refrigerate for up to 24 hours. For a spicy twist, add diced jalapeños. Leftovers can be stored in an airtight container in the refrigerator.
