Ingredients

  • 1 cup rice
  • 1/2 pound ground beef
  • 1/2 pound ground sausage
  • 1 onion, chopped
  • 1 stalk celery, chopped
  • 1 green pepper, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • 3 cups chicken broth or water

Cooking

  • In a large skillet, brown the ground beef and sausage over medium heat until cooked through. Drain any excess fat.
  • Add the chopped onion, celery, green pepper, and garlic to the skillet. Cook until the vegetables are soft.
  • Stir in the Cajun seasoning, rice, salt, and pepper.
  • Pour in the chicken broth or water. Bring to a boil.
  • Reduce heat to low, cover, and simmer for about 20-25 minutes until the rice is tender and the liquid is absorbed.
  • Fluff with a fork and serve.

Notes

Use day-old rice for better texture. Adjust Cajun seasoning to taste; add cayenne for more spice. A vegetarian version can use black beans or lentils instead of meat.
