  • 1 cup long grain white rice
  • 1.5 cups chicken broth
  • 1 can cream of mushroom soup
  • 2 cups cooked chicken, shredded You can use leftover or rotisserie chicken.
  • 1 cup frozen mixed vegetables
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional) Use any type of cheese you prefer.

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a large baking dish, combine the rice, chicken broth, cream of mushroom soup, shredded chicken, and frozen vegetables.
  • Season with salt and pepper, and stir until well combined.
  • Cover the dish tightly with foil.

Baking

  • Bake for 45 minutes, then remove the foil and sprinkle cheese on top if desired.
  • Bake for an additional 15 minutes or until the cheese is melted and bubbly.
  • Let stand for a few minutes before serving.

Notes

For extra flavor, consider adding garlic powder or onion powder. You can customize the casserole with different vegetables or cheeses.
